Maple Mustard Salmon
Serves 4.
Salmon fillets for four
2/3 cup melted butter
½ tbsp. dried dill
½ cup Burke's Maple Syrup
¼ cup Dijon style mustard
Blend ingredients over low heat until melted together. Grill or broil salmon,
basting and turning until flaky and done.
Maple Walnut Pie
Serves 6 to 8
2 tbsp. butter
1/4 cup flour
1 cup Burke's Maple Syrup
1/2 cup water (use fresh maple sap in season)
3/4 cup walnut halves or pieces
Pastry for one 8" or 9" pie shell
Melt butter in small saucepan. Add flour all at once. Cook, stirring
constantly, until mixture is golden brown. Add syrup and water and cook,
whisking constantly until thickened. Allow to cool for 10 minutes. Add nuts.
Pour warm filling into prepared pie shell. Bake at 350°F on center rack of
oven 35 to 40 minutes or until filling is set and crust is golden brown. Cool
on wire rack. May be decorated with nuts, pastry maple leaves, etc. Best if
garnished with whipped cream .
If it's a deep dish pie crust, do a double batch but cook batches in two
separate pots at the same time, then fill crust and cook an additional 5-10
minutes.
Baked Syrupy Chicken
4 Chicken Breasts
1 1/2 cups Burke's Maple Syrup
1 1/2 cups Apple Cinnamon Oatmeal
1/2 cup Walnuts
Salt and Pepper
In a food processor or blender combine oatmeal and walnuts, blend into a
fine consistency. Place mixture in one bowl, in a separate bowl pour the
syrup. Salt and pepper the chicken breasts. Cover the chicken breasts in
syrup making sure all areas are covered. Then roll them in the oat mixture to
achieve a breading type process. Place in a greased baking dish and bake
in a 350 degree F oven for 35-45 minutes or until chicken is cooked
throughout.
Maple Muffins
2 Cups Flour 1/4 Cup Butter, Softened
3 Tsp Baking Powder 1 Egg
1/2 Tsp Salt 3/4 Cup Burke's Maple Syrup
2 Tbsp Sugar 1/4 Cup Milk
Stir together dry ingredients. Add butter and blend well. Add egg, pure
maple syrup and milk. Stir until well blended (DO NOT BEAT). Fill greased
muffin tins about 1/2 full. Bake at 400 degrees for 20-25 minutes. Makes
about 12 muffins.
Maple Pork Chops
6 pork chops 1 Tbsp. vinegar
1/4 cup Burke's Maple Syrup 1/4 tsp. pepper
1/2 tsp. chili powder 1 Tbsp. Worcestershire
1/4 cup chopped onion 1 1/2 tsp. salt
1/4 cup water flour to thicken gravy
Preheat over to 400. Lightly brown pork chops in olive oil. Place chops in
baking dish. Combine all other ingredients over low heat & pour over chops.
Cover & bake 45 min. basting occasionally. Uncover, bake 15 min. longer.
Take chops out, thicken sauce with a little flour. Pour sauce over chops &
serve.
Sweet Bread
2 1/2 Tbsp butter 3 1/4 cups flour
1 cup Burke's Maple Syrup 1 Tbsp baking powder
1 egg 1/4 tsp baking soda
3/4 cup orange juice
Preheat oven to 325 degrees. Grease a 9 x 5-inch loaf pan. Using an
electric mixer, cream together butter and maple syrup; beat in eggs. In a
separate bowl, add flour, baking powder, baking soda; add alternately with
orange juice to egg mixture. Turn into prepared pan. Bake 45 minutes or
until a tooth pick inserted comes out clean. Cool completely on wire rack
before slicing.
Maple Roasted Chicken & Sweet Potatoes
1 large yam or sweet potato
1 medium onion
1 cup Burke's Maple Syrup
4 chicken breasts, cut into small chunks
Preheat oven to 400. Slice large sweet potato or yam into thin slices. Chop
onion into small pieces. Cut chicken up into small chunks. Toss all of the
above in a large bowl with maple syrup until lightly coated. Place in large
baking dish and bake in the oven for 25 minutes (or until chicken is cooked
through).
Maple Spare Ribs
3 lbs pork spare ribs 2 tsp. salt
2 1/2 Tbsp. chili sauce 1/2 tsp. dry mustard
2 Tbsp. chopped onion 1/4 tsp. chili powder
1 1/2 cups Burke's Maple Syrup 1/8 tsp. pepper
Simmer spare ribs in salted water for 30 mins. Drain. Place in 9 x 13 baking
pan. Combine remaining ingredients. Pour mixture over ribs. Bake at 375
for 30 mins., basting frequently until done. The sauce will be thick and the
ribs glazed. To grill: place ribs on grill over medium heat, turning and basting
often for 30 Minutes, or until tender.
Maple Sweet Potato Salad
2 lbs. sweet potatoes or yams, peeled and cubed
1/4 cup Burke's Maple Syrup
3/4 cup Mayonnaise
1 medium Granny Smith apple, cut into 1/4-inch cubes
(optional 1/4 cup chopped walnuts or pecans)
Preheat oven to 400*. In medium bowl, toss potatoes with Maple Syrup.
Spread potatoes on a baking sheet and bake, stirring once, 30 minutes until
potatoes are tender; cool completely. In large bowl, combine potatoes,
apple, dried fruit, nuts if desired and remaining Mayonnaise; toss to coat.
Chill before serving.
Vegetables and Side Dishes

Maple Glazed Carrots
1 cup Burke's Maple Syrup
8 medium garden carrots
3 tablespoons butter
1/4 teaspoon ginger (optional)
Prepare and slice the carrots. Cook until tender. Drain. Add maple syrup
and butter. Simmer carrots in maple syrup mixture until glazed. Yield: 8
delicious servings.

Oatmeal Maple Muffins
1 cup quick-cooking rolled oats 1/2 cup milk
1 cup all purpose flour 3/4 cup Burke's Maple Syrup
2 teaspoons baking powder 1/4 cup butter, melted
1/4 teaspoon cinnamon 1 egg
1/2 cup chopped walnuts (opt.)
Heat oven 400 degrees. Grease bottom only of muffin pan or line w/ papers.
In a large bowl, combine oats and milk; let stand 5 minutes. Add syrup,
butter, and egg; blend well. Add flour, baking powder, cinnamon, and
walnuts; stir just until dry ingredients are moistened. Fill muffin cups 2/3 full.
Bake at 400 degrees F for 15 to 20 minutes until tooth pick inserted comes
out clean. Immediately remove from pan. Makes about 12 muffins
